leek, bok choy, & noodle soup
i’ve never cooked leeks or bok choy in my life, so when they came in our CSA box last week, i was at a loss as to what to do with them. i found this post, and set to chopping and washing the leeks - and when i did, they just SMELLED like soup to me. (maybe because they have a subtle onion flavor.) and since i’m feeling incredibly sick and can barely eat solid food, it ended up being a perfect choice.
chop and clean 4 leek stalks, according to this guide
rinse and chop 2 bunches bok choy (or any other green you feel like, really)
in a soup pot, pour 3-4 cups vegetable broth and 3-4 cups water. add in the leeks, some oregano, marjoram, bay leaf, thyme, and salt. let it stew on medium heat for about ten or so minutes.
add in the bok choy and noodles. the lo mein noodles i used cooked in about five minutes.
serve, maybe with some crusty bread, and enjoy! imagine this to be similar to a less intense version of onion & greens soup. this makes enough for about four mildly hungry people.
