This looks so good.leek, bok choy, & noodle soup
i’ve never cooked leeks or bok choy in my life, so when they came in our CSA box last week, i was at a loss as to what to do with them. i found this post, and set to chopping and washing the leeks - and when i did, they just SMELLED like soup to me. (maybe because they have a subtle onion flavor.) and since i’m feeling incredibly sick and can barely eat solid food, it ended up being a perfect choice.
- chop and clean 4 leek stalks, according to this guide
- rinse and chop 2 bunches bok choy (or any other green you feel like, really)
- in a soup pot, pour 3-4 cups vegetable broth and 3-4 cups water. add in the leeks, some oregano, marjoram, bay leaf, thyme, and salt. let it stew on medium heat for about ten or so minutes.
- add in the bok choy and noodles. the lo mein noodles i used cooked in about five minutes.
- serve, maybe with some crusty bread, and enjoy! imagine this to be similar to a less intense version of onion & greens soup. this makes enough for about four mildly hungry people.
